Also known as French allspice or four spices. Our house made French and North African blend has notes of nutmeg and ginger, bringing warmth and earthiness to the table.
This spice blend was born in the 17th Century as a result of French colonization in North Africa. At the time, pepper was a commodity more valuable than gold and more precious than silk garments.
Ironically, when the French use this spice, it is often to make North African cous cous. It also marries beautifully into dishes such as a fish tagine, soup, and ragout, or in charcuterie such as paté.
